All the cruciferous vegetables – that’s the cabbage family – are super foods. They are high in vitamin C, and contain fiber, folate, potassium, magnesium and vitamins A & K. Red cabbage has more vitamin C, iron and anthocyanins than green cabbage. Anthocyanins have antidiabetic, anticancer, anti-inflammatory, antimicrobial, and anti-obesity effects, as well as playing a role in preventing heart disease. Our baby red cabbage is non-GMO and heirloom. Red cabbage can be made into a colorful coleslaw salad which can keep in the fridge for days, or it can be fermented for kimchi or sauerkraut. Or cook it with sour green apple as a vegetable, or with onion and spices.
