In Germany, kale is only harvested after the first frost, so that cell walls are broken and it is easy to cook. In sunny South Africa, the easiest way to cook any kale is to put it in a packet in the freezer for an hour or two before you cook it. Slowly cooked with garlic & onion – & maybe some gravy – you will create a delicious ‘smoor’. The Dutch & Irish make a poor man’s dish with mashed potato, kale (‘boerenkool’), carrots, turnips or whatever, all mashed. Top with some homemade gravy, and if you are rich that week, add some slices of sausage. Comfort food for the entire family.
